Frozen Dessert Pancakes

Step 1: Remove ice cream from the freezer while you make the pancakes and syrup. This should give it time to become scoop-able. If you like it softer, you can always throw it in the microwave for a few seconds Step 2: Make pancakes Step 3: Make Chocolate Sauce. Step 4: Assemble.
Ingredients
  • Pancake Ingredients:
  • 2 cups oat flour
  • 1 TBSP baking powder
  • 2 tsp brown sugar
  • 2 large eggs
  • 2 TBSP melted coconut oil
  • 1 cup unsweetened almond milk

  • Alternate Pancake Option: Sometimes I like to use all natural, high protein pancake blends found at any grocery store. These can be mixed with eggs and milk for higher protein content. For each pancake I will use roughly ¼ cup of batter and you can use 3-4 pancakes for this recipe.

  • Chocolate sauce:
  • ¼ cup coconut oil, melted
  • 1-2 TBSP cocoa powder
  • .5-1 TBSP honey

  • 3-4 Pancakes is one serving.
Instructions
  1. To Make Pancakes:
  2. Combine dry ingredients.
  3. Mix well
  4. In a separate bowl whisk eggs.
  5. Pour in oil and stir until combined.
  6. Pour wet ingredients into dry.
  7. Mix well.
  8. Pour ¼ cup batter on hot griddle to make into pancakes.

  9. *if you want these to be chocolate pancakes, mix in 1 TBSP cocoa powder into dry ingredients.

  10. To Make Chocolate Sauce:
  11. Mix together until thoroughly combined.

  12. To Assemble:
  13. Layer pancakes on plate.
  14. Scoop ice cream on top of pancakes.
  15. Drizzle with chocolate syrup.
  16. Top with a fruit preserve and some chocolate chips!
